By now, you have to know that I love single serving desserts. ESPECIALLY if they’re made in a mug and a microwave in less than 2 minutes time. Sometimes you just want your dessert and you want it NOW, MY GOODNESS IS THAT TOO MUCH TO ASK??! Ok, I’m a little crazy right now, I’m in the end of this pregnancy (sort of…) and I’m basically alternating between Jess-yl and Hyde 3500 times a day. (Wow, I made a funny!) But I digress. This little “peanut butter” mug cookie happened basically because I had not one slip of chocolate in the house and girl needed her sugar fix like YESTERDAY. So I messed around and came up with this, for all you non-chocolate lovers out there (do you even exist???), this is the perfect little sweat treat. I actually loved it, and I almost feel guilty for saying that, like I’m betraying my beloved chocolate or something…but here it is, go forth and create my friends!
1 tbsp grass-fed butter or coconut oil
1 tbsp Sunbutter (creamy)
2 tbsps coconut sugar
dash of vanilla
pinch of salt
1 egg YOLK only
3 tbsps almond flour
- Melt butter and Sunbutter together in a mug for about 20-30 seconds.
- Add sugar, vanilla, and salt and mix well.
- Add in egg yolk and stir until creamy.
- Mix in flour until well combined.
- Heat in microwave for 35 seconds.
- Let cool, and ENJOY!
