Hey guys! Welcome to my first ever Mid-Week Mini Post! So these little blurbs will be dedicated to smaller “accessory” food items like sauces, dressings, MUG CAKES (oh my god, can we all agree that mug cakes are the best invention ever?), and in general things that aren’t super complicated, and aren’t meals, sides, desserts and the like. I’ll be dropping some of these here and there mid-week to give you access to those recipes, as they’ll generally be used in conjunction with full meals that will be up later on the blog. Instead of my usual long and extremely witty post, these will typically be short, sweet, and to the point–just like the recipe.
So sit back and enjoy this amazingly flavorful homemade Creamy Paleo Poppyseed Dressing. I absolutey LOVE this on any salad, you can use it as a dip for things like chicken strips, or my personal fav way to use it is mixing it with sliced fresh peaches and throwing it over a typical garden salad for something extra special. Hope you like it!
3/4 cup paleo friendly mayo (the recipe I use can be found here)
4 tbsp honey
2-3 tbsp apple cider vinegar (this is a range depending on how tangy you want it)
1/2 cup light olive oil (yes you have to use LIGHT, not EVOO–you want the milder flavor)
1 tbsp poppyseeds
- Add mayo, honey, and ACV to food processor or blender and mix well.
- While food processor is running, slowly add in olive oil while blending.
- Add in poppyseeds and blend until just mixed well.
- Store in fridge for up to a week until used completely.
